Laura Lee Kopf

Laura L. Kopf, age 64, of Hastings, Minnesota, passed away peacefully on January 5, 2026.

Laura was born on March 4, 1961, in Hastings to George and Mary (Fox) Nelson. She grew up in Hastings with her brothers, Steve, Paul, and Jim, and spent her childhood enjoying the outdoors and the simple pleasures of her hometown.

She graduated from Hastings High School and later married Robert Kopf Jr. Together they welcomed their daughter, Samantha, who was the center of Laura’s world. Being a mom was one of Laura’s greatest joys, and she cherished time spent with her family, especially their trips to Minnesota’s North Shore, where many special memories were made.

Laura had a kind and compassionate heart and a way of making people smile, even on their hardest days. She always put others first and cared deeply for those around her. She loved her cats, enjoyed shopping, and found happiness in the everyday moments that often meant the most.

Laura was incredibly proud of her daughter, Dr. Samantha “Sami” Kopf, and all she accomplished in earning her doctorate. She was also so happy to see Sami marry her husband, Anthony Lee Apple, and took great joy in the life they built together.

She was preceded in death by her father, George Nelson.

Laura is survived by her daughter, Dr. Samantha Kopf (Anthony Lee) Apple; her mother, Mary Nelson; her loving brothers, Steve, Paul, and Jim Nelson; her nieces and nephews; other relatives and friends.
