Cassandra "Sandy" Kaufman

Cassandra "Sandy" Kaufman, age 54 of Rosemount, died peacefully surrounded by her loving family on Sunday morning, August 27, 2017, at Regions Hospital in St. Paul. Cassandra Dee, the daughter of Frank and Bette (Radke) Knoll, was born on February 9, 1963, in Farmington. Sandy attended Rosemount High School, and following her graduation, attended DCTC where she studied to be a teachers aide. On October 20, 1984, Sandy was united in marriage to her high school sweetheart, John Joseph Kaufman at St Johns Lutheran Rich Valley. They were blessed with one daughter, Rebecca "Becky" Kaufman, prior to his passing in 2002. Sandy was a teachers aide at Simley High School in the special ed department prior to being a homemaker when John became ill. Sandy lived life to the fullest. She enjoyed having a good time, and always made sure everyone was happy. Sandy also enjoyed fishing, as well as cooking, canning, spending time on the river, listening to music, especially country and rock, and going to tractor pulls. She was preceded in death by her husband, John Joseph; her father-in-law, John Francis Kaufman; and by her mother, Bette Knoll. Sandy is survived by her only child, Rebecca Kaufman; her special friend, Tom Plan; her father, Frank Knoll; her mother-in-law, Harriet Kaufman; her siblings, Cynthia Knoll, Mitch (Vicki) Knoll, Marshall Knoll, Mike (Bonnie) Knoll, Monte (Lesa) Knoll, Mace (Dung) Knoll, and Morgan Knoll; her sisters-in-law, Betsy (Mike) Rud and Sue (Rick) Meemken; and by many nieces, nephews, other relatives, and friends. Funeral services will be held 11:00 a.m. Thursday, August 31, 2017, at Eagle Brook Church, 11125 Eastview Road, in Woodbury. Visitation will be held 9:00 to 11:00 a.m. at church on Thursday morning. Private family interment will be held at a later date.Arrangements are being completed by Caturia-Smidt Funeral Home Cremation Services of Hastings.
