Aslaug Solveig Warmboe, age 98, of Hastings, Minnesota, passed away peacefully on October 21, 2025.
Aslaug was born on June 21, 1927, in Husavik, Iceland, just twelve miles south of the Arctic Circle, to Sigurdur Vigfusson and Jonina Gunnarsdottir. She was the youngest of four children and the only daughter among three older brothers, Gunnar, Vigfus, and Viggo. From an early age she was known for her strong will, sharp intelligence, and quick wit.
While living in Reykjavik, Aslaug met the love of her life, Robert Warmboe, at the Hotel Borg. The two were married in Reykjavik before coming to the United States. They moved to several states before settling in Hastings, where Aslaug quickly felt at home.
Together they raised four children, Viggo, Steven, James, and Laurie. She built a life devoted to a strong family connection even though family was an ocean apart.
Aslaug worked for more than thirty years in the Hastings School District, beginning as a lunch lady and eventually retiring as the Food Service Director. This allowed her to spend summers at home in Iceland.
Proud of her Icelandic heritage, Aslaug was an honored member of the Women’s Hekla Club and the Icelandic American National Association and took great joy in sharing stories about Iceland and cooking Icelandic delicacies at many functions. Her culinary talents earned her numerous awards, magazine covers, and television appearances—including a featured guest spot on the season finale of Mo Rocca’s My Grandmother’s Ravioli. She perfected her Icelandic pancakes and had the honor of preparing and serving them for the Kings and Queens of all the Nordic countries.
After retiring, Aslaug embraced adventure. She continued to spend her summers in Iceland and then started spending some wintertime in Hawaii. She has traveled all over Europe and was fluent in five languages. No one was a stranger to her—she had a gift for drawing people in and loving them wholeheartedly.
She is preceded in death by her husband, her parents, her three brothers, and her son Steven.
She is survived by her three children: Viggo (Nina) Warmboe, James (Pam) Warmboe, and Laurie (Greg) Kokkeler; her ten grandchildren, nine great-grandchildren, and four great-great-grandchildren and many beloved nieces, nephews, and friends across multiple continents.
And finally, let us not forget she was a devoted Vikings fan that never gave up on “her boys” as she so fondly called them.
